Black Tea

ORGANIC English Breakfast.

A good cup of English Breakfast tea is the best way to start the day. 
A robust blend of Indian teas that, when blended with milk, has the comforting aroma of warm toast and honey. Mmmm delicious!

Ingredients: certified organic black tea (camellia sinensis)
Origin: India
To brew: 1tsp tea per cup. Infuse in freshly boiled water 2-3min. Enjoy with or without milk. Sweeten to taste.

Organic Earl Grey.

It seems that the much-loved Earl Grey tea was named after the 2nd Earl Grey who was the British Prime Minister in the 1830’s. He reputedly received a diplomatic gift of black tea flavoured with bergamot orange oil. This distictive, aromatic tea is light and uplifting and is the perfect companion for scones and other afternoon tea delights.

To brew: 1tsp tea per cup. Infuse in freshly boiled water 2-3min. Traditionally served without milk but that's up to you. Sweeten to taste.

Bon voyage - organic french earl grey

We wish you "Bon Voyage" as you sail off into the sunset with this delightful French favourite. Our classic Earl Grey is given an exotic twist with pretty petals of blue cornflowers, rose and calendula and the zing of zesty orange peel.

Almost too pretty to drink, this fragrant black tea has floral and citrus notes which makes it perfect to enjoy on its own or with a slice of lemon.

organic premium Assam ORANGE PEKOE

A full bodied, yet elegant black tea from the Assam region in Northern India, India’s largest tea growing region close to the borders of Bangladesh and Myanmar, along the Brahmaputra River. Recognised for its tart, malty flavour, vigorous body and bright colour, Assam is well known as a breakfast tea. Our Assam OP or Orange Pekoe, is a grade of tea that has a larger, well twisted whole tea leaf with a forest-like scent. The liquor has a golden reddish colour with a delicate lighter taste than the smaller broken tea grades.

organic lapsang souchong

Lapsang Souchong is a style of smoky black tea grown in the Fujian province in China. The ‘Souchong’ refers to the fourth and fifth leaves of the plant, which are coarser and less aromatic than the pekoe buds, allowing them to take on the smoky characteristics of a campfire. The leaves are roasted in a bamboo basket which is heated over burning pinewood, this contributes to the smoky, resiny flavour and aroma. You’ll smell timber resin, sweet paprika and the peaty whiff of malt whisky.

This black tea packs a punch and is not for the feint hearted.

QUEEN OF HILLS
premium first flush darjeeling

Sourced from one the oldest and highest plantations in the mist-shrouded mountain ranges of Darjeeling, India, this first flush black tea displays all the typical characteristics of this famous, high grown tea.
Spring Flush, popularly known as the First Flush is famous for its fresh flavour and is the most sought after of the Darjeeling teas. The tea is plucked immediately after the harsh winter during March and April and is bountiful with fresh flavour resulting from its extreme growing conditions.
This mildly oxidised tea is light on the palate with a smooth clean flavour. Thin bodied, with a light coloured infusion and a floral aroma.
Enjoy this soft and mellow tea on its own.

To brew: 1tsp tea per cup. Allow freshly boiled water to cool slightly to 90 degrees. Infuse 3-4min. Best enjoyed on its own. No milk.

AUSTRALIAN BILLY TEA

Early Australian settlers brewed their tea in a Billy; a metal can with a wire handle, filled with water and suspended over an open fire. When the water boils, it is removed from the fire with a forked stick, and a fistful of tea leaves are added. This is then left to brew for a few minutes. And in true swagman style, a couple of scented eucalyptus leaves are often thrown in for extra “bushy flavour.

The next step requires some level of caution and skill. Grab the hot handle using a hat, or something similar, and in order to get the tea leaves to sink to the bottom, swing the billy over your head, in a full circle, three times. This requires a purposeful swing without hesitation to prevent a painful scalding. It is also recommended that bystanders keep their distance!

However if you are not up for these fireside shenanigans, just let the billy sit for a minute or two and then pour carefully into metal mugs. You still get a good cuppa without risking life and limb.

You can add milk and sugar, although it's unlikely the early settlers would have had access to either.

OR, you can just switch on the kettle at home and brew up an Aussie bush experience.
